Panini Caprese

 

½ pound fresh Mozzarella

2 Ciabattina rolls

Extra Virgin Olive Oil

2 Medium tomatoes cored and sliced

Salt and fresh ground pepper to taste

Dried Oregano

8 Fresh Whole Basil Leaves

 

Slice the mozzarella and place on clean towel or paper towel folded in half. Slice the Ciabattina in half horizontally. Place the bread cut side down on a grill or cut side up under a broiler and toast lightly. Drizzle cut sides with olive oil.

Arrange the tomatoes on the bottom halves then the mozzarella, season with salt and pepper, oregano, and olive oil. Top with the whole basil leaves. Cover with top of rolls and serve.
